This was the first soup of the season and I posted how grateful I am for healthy food, and one of my besties asked for the recipe. So I was forced to write it down. Haha. I meant to make this with a can of diced tomatoes, but forgot to buy them, so I improvised… Continue reading Mexican Turkey Soup with Veggies. Easy, Cheap and Delicious.
Get ready for some delicious ribs for Memorial Day Weekend. And I apologize in advance for the bad image, this was taken a while back. I think we ate the ribs so fast we forgot to take more pics. We are Irish on both sides of our family so we love a good Irish dinner. But of course, we have our food challenges, both for me and my sweet, part-Irish Pop. So you all know I've been experimenting with different diets to deal with some tummy troubles and other issues. I remember coming across a low FODMAP diet years back and I thought "heck no, I can't follow that plan". So we know cutting out soy would be an adventure, but I didn't know it would be so interesting. Of course I was bummed when I looked on my can of La Victoria Green Enchilada Sauce, and although it is gluten free, I discovered last week that it does contain soy. DRAT! I'm thinking I'll… Continue reading What I Learned from Cutting Out Soy
I know people tend to write a lot about the meals they prepare, but there's no long story for this meal. I bought a turkey tenderloin at Walmart grocery and never made one before.
