I LOOOOOOOOVE Au Gratin potatoes and I don't make them very often, because honestly, I'd eat the whole pan myself, if I was left alone in our house. I made this recipe for a family dinner last Saturday, and they are SO yummy, and not that difficult. They honestly are some of the best au… Continue reading Delicious, Dairy Free Au Gratin Potatoes
Get ready for some delicious ribs for Memorial Day Weekend. And I apologize in advance for the bad image, this was taken a while back. I think we ate the ribs so fast we forgot to take more pics. So you all know I've been experimenting with different diets to deal with some tummy troubles and other issues. I remember coming across a low FODMAP diet years back and I thought "heck no, I can't follow that plan". Alas, I'm giving it a shot at least for a couple of weeks to see if… Continue reading Can you eat out while following a Low FODMAP Diet?
Y'all. I love to cook, and I especially love to go out to restaurants and eat, BUT we usually skip Valentine's Day out because most restaurants serve a pre-fix menu filled with dishes we can't even enjoy (and don't get me started on the desserts). Plus, V-Day is so dang expensive, I'd rather spend money… Continue reading Simple, Tasty AF Valentine’s Day Tuscan Chicken
Sounds a bit strange but super tasty. Ground beef cooked through. Add diced bell pepper and red onion. Add mushrooms and green beans and saute all together. Add coco aminos, 1-2 tablespoons, and eat as is, or serve over a little bit of white rice.

TIP cook your veggies in the microwave for less clean up. I cooked this spinach… Continue reading Pasta without the guilt

So we know cutting out soy would be an adventure, but I didn't know it would be so interesting. Of course I was bummed when I looked on my can of La Victoria Green Enchilada Sauce, and although it is gluten free, I discovered last week that it does contain soy. DRAT! I'm thinking I'll… Continue reading What I Learned from Cutting Out Soy
I know people tend to write a lot about the meals they prepare, but there's no long story for this meal. I bought a turkey tenderloin at Walmart grocery and never made one before. I was inspired by the recipe over at 101 Cooking for Two and came up with a version of my own.… Continue reading Turkey Tenderloin with Herbs and Gravy DGS Free
My girls and I had never made a scratch cake that was gluten free and dairy free, much less a bundt cake. We did… Continue reading Moist & Delicious Pumpkin Bundt Cake Recipe (DGS Free)
