3 cups Pineapple Juice (I use fresh Dole)
3 Limes juiced
1 Jalapeno sliced thin (keep the seeds for more spice)
Sparkling wine or Champagne
Pineapple Spears to garnish
Pineapple and lime juice in a cocktail shaker with ice. Parts 3 to 1. Shake it up and pour into your glass about halfway. Add a sliver of jalapeño if you like it spicy like me. Top with champagne or Prosecco and throw in an ice cube or two. Garnish with a fresh pineapple spear and get ready for a refreshing, light drink that won’t get you too toasty to celebrate.
Of course you can replace the sparking wine with hard liquor, just throw in a shot or two depending on the size of your glass.
