I know people tend to write a lot about the meals they prepare, but there’s no long story for this meal. I bought a turkey tenderloin at Walmart grocery and never made one before. I was inspired by the recipe over at 101 Cooking for Two and came up with a version of my own. When you want the taste of turkey, but don’t want to cook up the entire bird, this is a delicious option and perfect for a weeknight meal.
1 cup cold water
1. Preheat oven to 375. Pat turkey tenderloin dry with paper towel.
2. Add oil to saucepan and turn to medium-high heat. Mix Herbs de Provence, garlic powder, salt and pepper in a small dish. Rub mixture all over the tenderloin and place in saucepan.
3. Sear tenderloin on both sides, about 3-4 minutes per side. At the same time pour remaining tablespoon olive oil into baking dish large enough for tenderloin. Once tenderloin is seared, place tenderloin in dish and add 1 cup chicken broth.
4. Bake tenderloin until 165 degrees, around 25 minutes in the oven. Remove from oven and place tenderloin on a plate and cover loosely with foil. Pour turkey juices into original saucepan for gravy and place on burner over medium-high heat.
5. Add remaining 1 cup chicken broth to saucepan and bring to a simmer. Pour flour into cup of cold water and whisk together until smooth. Add mixture to pan and stir until thickened for gravy.
6. Slice the tenderloin and serve with gravy. We enjoyed ours with homemade mashed potatoes and sauteed green beans.
