This was originally a recipe from the Weight Watchers cookbook “Dinners in a Flash”, but I doctored it up a bit to suit my needs and the tastes of my family. It was delicious, easy and healthy. Win-Win-Win. Enjoy!

You can find this recipe on the Weight Watchers website if you are a member. You may also add sour cream, but it may increase WW points. You may also wish to add cucumber, or bell pepper, or any other veggies you want – go for it and enjoy.
Turkey Taco Salad Gluten Free
Serves 4 * 10 Weight Watchers Smart Points per Serving
2 teaspoons canola oil (or other light oil)
1 pound ground turkey
1/2 teaspoon chile powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup green or red salsa (we used Trader Joe’s Fresh Tomatillo Salsa)
6 cups fresh, chopped romaine lettuce
24 Gluten Free tortilla chips, broken into large pieces, or as is
1/2 cup shredded cheese (we used Trader Joe’s Lactose Free shredded cheese blend)
1 avocado, pitted and sliced into small pieces
1 cup grape tomatoes, halved
Heat oil in large skillet over medium-high heat. Add turkey and cook, breaking apart with a wooden spoon, until no longer pink about 5-6 minutes. Add chile powder, cumin, garlic powder, salt and pepper and stir, cook for 1 minute. Stir in 1/2 cup salsa and cook until heated through, about 4 minutes.
Divide romaine among 4 plates. Top with turkey mixture, tortilla chips, cheese, avocado and tomatoes. Squeeze lime juice over salads and top with additional 1/2 cup salsa. One of my kids bypassed the additional salsa and added basil vinaigrette instead (#shefancyhuh).
This is a great meal for a weeknight or spring or summer evening when you just don’t feel like doing a whole bunch.
