Sometimes when I am on my computer working at night, and my husband is at work, I write “To Do” lists for myself. Last night I wrote one for my husband and one for myself because he is always wanting to know what I do at night with the girls. Like I’m taking Kamikaze shots or something.

Speaking of my other talents, I am SO not resourceful when it comes to dinner planning. I SUCK at dinner planning. Meal planning. Whatever. I decided to write the words “Look in the Fridge” on my dry erase grocery board to encourage myself to save some cash and make better decisions.
Cut to the following items in my fridge; one zucchini, half a jar of marinara sauce, parmesan cheese, almost a full container of ricotta and some yellow tomatoes. In my cupboard at all times I seem to have 4 half eaten boxes of
Barilla Gluten Free Pasta.

Write our short grocery list and the girls and I head to Von’s. Ground turkey is $6.49 per pound. WTH? Nope. We see the ground chicken for $4.99 and then because I was starving we also grab a package of
Aidell’s Caramelized Onion Chicken Meatballs. OMG. I am SO glad I did. They are Gluten Free and super easy to make. Just pop them on a baking sheet and heat them through or add them to your sauce on the stovetop.
I whipped up the most delicious dinner for us all; I spooned ground chicken meat sauce (1 lb ground chicken, 1/2 jar
Barilla Marinara Sauce and can of petite diced tomatoes with garlic and OO, S&P) plus 2-4
Aidell’s chicken meatballs over a spoonful of ricotta on a bed of sauteed zucchini Zoodles & mushrooms and a 1/4 cup of rotini pasta. Topped it all with 1 Tablespoon of Parmesan.
After we enjoy our scrumptious dinner the girls scarf some candy from their See’s chocolates box from Christmas. I look away and will pretend those tempting treats are not present in my house. But c’mon what kind of mean mom would steal their child’s chocolates anyway? Hmmmmmmmm no one you know right?
Finally before I put the girls to bed we enjoy a session of “Show Me How to Get Down” which is an old cheer of mine and
Peanut Butter in a Cup. If you haven’t watched
Peanut Butter in a Cup with your kids and danced in your kitchen, you must do it NOW. I swear you’ll have a great time.
