I’ve been cooking and eating Gluten Free for over a year now. Sometimes I am triumphant, sometimes not so much. I made a simple recipe tonight that can be served over rice or simply over vegetables if you are cutting carbs as well. I opted for veggies only and it was delicious, satisfying and SUPER easy.
3/4 lb of ground beef, turkey, pork or chicken
1/3 cup Heinz Chili Sauce
2 Cups mixed, diced vegetables – I used red, orange and yellow bell peppers plus white mushrooms
G-Free Garlic Powder or fresh minced garlic 1-2 cloves
Salt
Pepper
EVOO
Kraft 100% Grated Parmesan Cheese (Optional)
Brown the meat in a skillet over medium high. Keep juices for more flavor or drain. I used 85/15 fat ratio only because I think it has more flavor than 90/10. It’s your choice. Add salt, pepper and garlic powder to taste. Reduce to low once cooked and keep on the stove top. Add Heinz Chili Sauce and stir to distribute.
In a second small skillet drizzle about a tablespoon of EVOO in the pan and heat to medium high. Add the vegetable mixture to the pan. Add a bit of salt and pepper to taste and cook for 4-5 minutes for crunchy a bit longer for softer veggies.
Simply plate the meal with a scoop of vegetables on the bottom and top with about a 1/2 cup of meat mixture. I added a dash of Kraft 100% Grated Parmesan Cheese on top too. If you are serving over rice I would put it at the bottom of the bowl, then veggies, then meat.
