Dreaming Tree Chardonnay Risotto

I’m always looking for great recipes that utilize my favorite Dreaming Tree Wines. This Lemon & Chardonnay Risotto is amazing, light and perfect with a chilled glass of wine. Make it for your Dad, husband or for yourself this weekend. Enjoy with grilled salmon or pork tenderloin, the two would pair perfectly with this creamy dish.

Dreaming Tree Chardonnay Risotto

The Stuff
1 1/2 cups Arborio Rice
1 (32 oz.) Container of Chicken Stock
1 cup water
2 tbsp EVOO
1 large shallot, finely chopped
2 large garlic cloves, minced
1 cup Dreaming Tree Chardonnay (or other dry white wine)
1 lemon, zested and juiced
2 tbsp room temperature butter, cut into small bits
1/2 cup grated parmigiano cheese
3/4 cup fresh basil leaves chopped
Salt and Pepper

The Show
Combine chicken stock and 1 cup water in a small saucepan. Keep over low heat just to keep warm.

Heat EVOO in a large saucepan over medium-high heat. Add garlic and shallot, stir for a couple of minutes, until translucent (clear). Stir in rice, season with salt and pepper. Keep stirring for one minute. Next stir in Dreaming Tree Chardonnay and lemon zest. This is when the fun begins…start with one or two ladles of warm stock/water combo, stir into rice quickly for about a minute. Continue to do this every few minutes for about 20 minutes. Each time you ladle remember to stir, stir, stir. Cook until risotto is al dente.

Once done with the stirring extravaganza, drop the butter bits into risotto and combine. Stir in lemon juice, cheese and basil. Season with salt and pepper to taste. Serve the risotto straight away with a chilled glass of…you guessed it – Dreaming Tree Chardonnay.
