Recently I was speaking with a group of girlfriends and referred to mini muffin pizzas. To my dismay, no one had ever made them before. What? How can this be? I grew up with mini muffin pizzas and they are a staple in my house to this day. Now I love to make them with my girls, and so can you, just follow this simple recipe.
1 English Muffin Split with a fork
(We like Thomas’ English Muffins)
2 Tablespoons Spaghetti Sauce or Prego Pizza Sauce
1/2 Cup Sargento 6 Cheese Italian Shredded Cheese
McCormick Italian Seasoning to Taste
Preheat oven to 400 degrees and line a cookie sheet with foil.
Lay the split muffins nooks and crannies side up on the foil-lined cookie sheet. Add 1 Tablespoon of sauce on each side of the muffin. Allow your kids to sprinkle with 1/4 cheese on each side of the muffin. I like to give the kids a bowl of cheese and let them get creative.
After kiddos are done, add Italian seasoning for yourself on top of the cheese, and if your child is adventurous, add some for him too. My kids are against green these days, so sometimes I will add the seasoning under the cheese, sneaky.
Pop the tray into the oven and cook for 10 minutes or until the cheese is bubbly. Take out and let cool. My kids like them put straight into the freezer for a minute or two. Feel like a kid again. Enjoy!
